Most of the time, the look comes from crushed blacks, muted skin tones, and visible grain. It is not about adding contrast until the image pops. It is about taking away the midtones that make digital video look squeaky clean.
Here is the thing: you can fake all of that in Photoshop, even if you only have a phone screenshot or a 10-second clip from an old DSLR. The software does not care how expensive your camera was.
